在现代餐饮行业中,后厨的卫生与安全直接关系到顾客的健康与餐厅的声誉。为了提升后厨管理的智能化水平,确保食品安全与人员健康,此次设计了一款基于STM32F103C8T6单片机的餐饮后厨智能监控系统。该系统集成了多种传感器与智能控制算法,实现了对后厨环境、人员操作及食品安全的全面监控与管理。
本系统通过集成颜色识别模块、非接触红外测温模块、MQ-2烟雾检测模块、红外避障管以及WIFI模块等关键组件,实现了对后厨人员佩戴口罩情况、体温检测、烟雾报警、以及环境参数的实时监控与远程管理。同时,系统配备OLED显示屏,直观展示当前监控数据,便于现场人员及时了解后厨状态。口罩佩戴检测:利用颜色识别模块配合红外避障管,智能识别后厨人员是否佩戴蓝色或白色口罩。若检测到未佩戴口罩情况,系统将立即触发声光报警,提醒相关人员及时佩戴。体温检测:通过非接触红外测温模块与红外避障管的配合,快速、准确地测量后厨人员的体温。一旦发现体温异常(超过设定值),系统将自动报警,并可通过WIFI模块将异常信息发送至餐厅管理层手机APP,以便及时采取应对措施。烟雾报警:MQ-2烟雾检测模块实时监测后厨空气中的烟雾浓度。当烟雾值超过预设最大值时,系统将启动声光报警,并通过WIFI模块向餐厅管理层发送警报信息,有效预防火灾等安全事故的发生。参数设置与显示:系统支持通过按键设置体温上下限、烟雾最大值等参数。同时,OLED显示屏实时显示当前体温、口罩佩戴状态、烟雾值等重要信息,为后厨管理人员提供直观的数据支持。远程监控与管理:通过WIFI模块与手机端APP的互联,餐厅管理层可随时随地查看后厨的实时监控数据(包括体温、烟雾值、口罩佩戴情况等),并可通过手机APP远程设置参数、接收报警信息,实现后厨管理的智能化与远程化。
基于STM32F103C8T6单片机的餐饮后厨智能监控系统以其全面的监控功能、精准的数据处理以及便捷的远程管理方式,为餐饮行业后厨管理提供了强有力的技术支持。该系统的应用将显著提升后厨管理的智能化水平,保障食品安全与人员健康,助力餐饮企业实现更加高效、安全、可持续的发展。

ABSTRACT
In the modern catering industry, the hygiene and safety of the kitchen is directly related to the health of customers and the reputation of the restaurant. In order to improve the intelligent level of kitchen management and ensure food safety and personnel health, a smart monitoring system based on STM32F103C8T6 microcontroller is designed. The system integrates a variety of sensors and intelligent control algorithms to realize the overall monitoring and management of the kitchen environment, personnel operation and food safety.
By integrating key components such as color recognition module, non-contact infrared temperature measurement module, MQ-2 smoke detection module, infrared obstacle avoidance tube and WIFI module, the system realizes real-time monitoring and remote management of the mask wearing situation of kitchen personnel, temperature detection, smoke alarm and environmental parameters. At the same time, the system is equipped with OLED display, which visually displays the current monitoring data, so that on-site personnel can timely understand the status of the kitchen. Mask wearing detection: The color recognition module and infrared obstacle avoidance tube are used to intelligently identify whether the kitchen personnel are wearing blue or white masks. If the mask is not detected, the system will immediately trigger an audible and visual alarm to remind relevant personnel to wear it in time. Temperature detection: Through the cooperation of non-contact infrared temperature measurement module and infrared obstacle avoidance tube, the temperature of the kitchen personnel can be measured quickly and accurately. Once the temperature is abnormal (exceeding the set value), the system will automatically alarm, and the abnormal information can be sent to the mobile phone APP of the restaurant management through the WIFI module, so that timely countermeasures can be taken. Smoke alarm: The MQ-2 smoke detection module monitors the smoke concentration in the kitchen air in real time. When the smoke value exceeds the preset maximum value, the system will start the audible and visual alarm, and send alarm information to the restaurant management through the WIFI module to effectively prevent the occurrence of safety accidents such as fire. Parameter setting and display: The system can set the upper and lower limits of body temperature and the maximum smoke by pressing buttons. At the same time, the OLED display displays the current temperature, mask wearing status, smoke value and other important information in real time, providing intuitive data support for the kitchen management personnel. Remote monitoring and management: Through the interconnection between the WIFI module and the mobile APP, the restaurant management can check the real-time monitoring data of the kitchen anytime and anywhere (including temperature, smoke value, mask wearing situation, etc.), and can remotely set parameters and receive alarm information through the mobile APP, so as to realize intelligent and remote management of the kitchen.
The intelligent monitoring system based on STM32F103C8T6 single chip microcomputer provides strong technical support for the kitchen management of the catering industry with its comprehensive monitoring function, accurate data processing and convenient remote management. The application of the system will significantly improve the intelligent level of kitchen management, ensure food safety and personnel health, and help catering enterprises achieve more efficient, safe and sustainable development.
